  • 2 cans white beans (cannellini or great northern)
  • 1 lb Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fresh spinach
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

  • In a large pot, heat olive oil over medium heat. Add the Italian sausage, breaking it up as it cooks until browned.
  • Add the diced onion, carrots, and celery to the pot. Sauté until the vegetables are softened, about 5-7 minutes.
  • Stir in the minced garlic, dried thyme, and oregano, cooking for an additional minute until fragrant.
  • Add the chicken or vegetable broth, diced tomatoes, and white beans to the pot. Bring the mixture to a boil, then reduce heat and let it simmer for 15-20 minutes.
  • During the last few minutes of cooking, add the fresh spinach and stir until wilted.
  • Season with salt and pepper to taste, then serve warm.

Notes

Serve warm garnished with fresh herbs or a drizzle of olive oil. Pairs well with crusty bread or a simple green salad. For extra flavor, consider adding a splash of lemon juice or a dash of red pepper flakes for some heat. Use fresh herbs for a fresher taste.
