  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh spinach or kale (optional)
  • Rustic bread for serving

  • In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Sauté until tender, about 5-7 minutes.
  • Stir in the garlic, thyme, and rosemary; cook for another minute.
  • Add the white beans and vegetable broth. Bring to a boil, then reduce heat and let simmer for 15-20 minutes.
  • If using, add fresh spinach or kale and cook until wilted.
  • Season with salt and pepper to taste.
  • Serve hot with rustic bread for dipping.

Notes

For added flavor, let the soup simmer longer to allow the herbs to infuse more into the broth. You can adjust the soup's consistency by adding more or less broth. Experiment with toppings like fresh herbs, a drizzle of olive oil, or Parmesan cheese. This soup is vegan as it uses vegetable broth, just ensure any additional toppings are also vegan-friendly.
