  • 1 can white beans (cannellini or great northern), drained and rinsed
  • 1 lb Italian sausage, removed from casing
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 cups fresh spinach
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • to taste Salt and pepper
  • Olive oil
  • Parmesan cheese for serving (optional)

Instructions
 

Cooking the Soup

  • In a large pot, heat olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned.
  • Add the onion, carrots, and celery to the pot and cook until the vegetables are softened. Stir in the garlic and cook for an additional minute.
  • Pour in the broth and add the white beans, oregano, thyme, salt, and pepper. Bring to a simmer and let it cook for about 20 minutes.
  • Stir in the fresh spinach and cook until wilted.
  • Serve hot, garnished with Parmesan cheese if desired.

Notes

For a lighter version, use turkey sausage. For more flavor, add a splash of white wine while cooking the vegetables. Feel free to add more vegetables like zucchini or bell peppers for added nutrition.
