  • 2 cans white beans (e.g., cannellini or great northern), drained and rinsed Use canned beans for convenience.
  • 1 medium onion, chopped
  • 2-3 cloves garlic, minced Adjust based on preference.
  • 4 cups vegetable broth Ensure it's gluten-free if required.
  • 2 cups kale or spinach, chopped Can substitute with swiss chard.
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
  • as needed tablespoons Olive oil for sautéing
  • as needed Rustic gluten-free bread for serving For dipping.

Preparation

  • In a large pot, heat olive oil over medium heat. Add the onion, carrot, and celery and sauté until the vegetables are tender, about 5-7 minutes.
  • Add the garlic and sauté for another minute until fragrant.
  • Stir in the white beans, vegetable broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 15-20 minutes.
  • Add the kale or spinach and cook for another 5 minutes until wilted.
  • Taste and adjust seasoning as needed.
  • Serve hot with rustic gluten-free bread for dipping.

Notes

For an even richer flavor, consider adding a splash of lemon juice before serving. You can mix and match the greens; swiss chard works well too. For extra flavor, add a pinch of red pepper flakes while sautéing the vegetables.
