  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped
  • 1/2 cup mini marshmallows (optional) Optional topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Boil the sweet potatoes in a large pot of water until tender, about 15-20 minutes. Drain and mash.
  • In a large bowl, combine the mashed sweet potatoes, melted butter, brown sugar, vanilla extract, cinnamon, and salt. Mix until smooth.
  • Transfer the mixture to a greased baking dish.
  • If using, sprinkle mini marshmallows on top of the sweet potato mixture.

Baking

  • Bake in the preheated oven for 25 minutes.
  • In a separate bowl, mix chopped pecans with a little butter and sprinkle on top.
  • Return to the oven and bake for an additional 10-15 minutes, or until the pecans are toasted.
  • Remove from the oven and let cool slightly before serving.

Notes

You can serve Sweet Potato Casserole warm as a side dish or as a dessert. For a vegan version, replace butter with a plant-based alternative and use coconut sugar.
