  • 2 cups mashed sweet potatoes Freshly mashed or canned, drained
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Topping

  • 1 cup mini marshmallows (optional) For a sweet topping
  • 1 cup brown sugar
  • 1/2 cup chopped pecans or walnuts For topping; can be toasted for extra crunch

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the mashed sweet potatoes, sugar, milk, melted butter, eggs, vanilla extract, cinnamon, and nutmeg. Mix until well combined.
  • Pour the sweet potato mixture into a greased casserole dish.
  • In a separate bowl, mix the brown sugar, chopped nuts, and additional melted butter. Sprinkle this mixture over the sweet potato layer.
  • If using, add mini marshmallows on top.

Baking

  • Bake in the preheated oven for 30-35 minutes or until heated through and the top is lightly browned.

Notes

For a smoother texture, use finely mashed sweet potatoes. Adjust spices to your taste to make it sweeter or crunchier with toasted nuts. Can be made ahead of time and stored in the fridge.
