  • 1 pound ground beef
  • 1 cup rice Can use white or brown rice
  • 4 cups broth Homemade or store-bought
  • 1 medium bell pepper, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups mixed fresh vegetables Like carrots and zucchini
  • to taste Salt and pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning

  • In a large pot, brown the ground beef over medium heat.
  • Add the onion and garlic, cooking until softened.
  • Stir in the diced bell pepper and mixed fresh vegetables, and cook for another 5 minutes.
  • Add the rice, broth, diced tomatoes, paprika, Italian seasoning, salt, and pepper.
  • Bring the soup to a boil, then reduce heat and simmer for about 20-30 minutes, until the rice is cooked.
  • Serve hot and enjoy!

Notes

Stuffed Peppers Soup can be served in bowls, topped with a sprinkle of fresh herbs or grated cheese. It pairs well with crusty bread or a simple side salad.
