Ingredients
  

For the biscuits

  • 2 cups all-purpose flour
  • 1/2 cup sugar for the biscuit base
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed use cold for flakiness
  • 1 cup heavy cream

For the filling

  • 2 cups fresh strawberries, hulled and sliced use ripe strawberries for best flavor
  • 1/4 cup sugar for macerating the strawberries
  • Whipped cream for serving to taste

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, mix flour, sugar, baking powder, and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Gradually add heavy cream, stirring until a dough forms.
  • Turn the dough onto a floured surface and knead gently.
  • Roll out and cut into rounds.
  • Place on a baking sheet and bake for 15-20 minutes or until golden.

Strawberry Preparation

  • Meanwhile, mix the sliced strawberries with 1/4 cup sugar and let sit.

Assembly

  • Once biscuits are baked and cooled, split them in half.
  • Layer strawberries between halves and top with whipped cream. Serve immediately.
