  • 2 cups corn (fresh or frozen) If using fresh corn, cook and cool it; if frozen, thaw it.
  • 1 cup cream cheese, softened
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup cheddar cheese, shredded Can substitute with pepper jack or feta.
  • 2 tablespoons green onions, chopped
  • 1 teaspoon chili powder Adjust for spiciness as needed.
  • 1 teaspoon lime juice Add just before serving for extra freshness.
  • Salt and pepper to taste

Preparation

  • If using fresh corn, cook it and let it cool. If using frozen corn, thaw it.
  • In a mixing bowl, combine cream cheese, sour cream, and mayonnaise. Mix until smooth.
  • Stir in corn, cheddar cheese, green onions, chili powder, lime juice, salt, and pepper.
  • Mix everything well until combined.
  • Chill the dip in the refrigerator for at least 30 minutes before serving.

Notes

Serve with tortilla chips, crackers, or fresh veggies. For extra flavor, add diced jalapeños. Leftovers last 3 to 5 days in an airtight container.
