Muffin Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup shredded cheese (optional) Use your favorite type.
  • ½ cup chopped vegetables (optional) Like bell peppers or onions.

  • 1 pound breakfast sausage Cook before adding to the batter.

Preparation

  • Preheat your oven to 350°F (175°C). Grease or line a muffin tin.
  • In a skillet, cook the breakfast sausage over medium heat until browned. Drain the fat and let it cool slightly.
  • In a large bowl, mix the flour, baking powder, and salt together.
  • In another bowl, whisk together the milk, vegetable oil, and eggs.
  • Combine the wet ingredients with the dry ingredients, stirring until just blended.
  • Fold in the cooked sausage and cheese (if using). Add chopped vegetables if desired.
  • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.

Baking

  • Bake for 20-25 minutes or until golden brown. A toothpick inserted in the center should come out clean.
  • Let the muffins cool in the tin for a few minutes before transferring to a wire rack.

Notes

Serve warm, delightful on their own or with fruit or yogurt. For a sweet twist, drizzle with syrup. You can make them ahead and store them in the fridge or freezer.
