  • 1 cup unsalted butter, softened Make sure your butter is softened to room temperature for the best texture.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tablespoon red food coloring For an extra pop of color, you can add a bit more food coloring.
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder You can use regular cocoa powder.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chunks You can swap these for dark chocolate chips or add nuts for crunch.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg, food coloring, and vanilla extract until fully combined.
  • In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in the white chocolate chunks.
  • Drop tablespoon-sized balls of dough onto a lined baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are set but the centers are still soft.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies can be served warm or at room temperature. They pair well with a glass of milk or a cup of coffee. You can sandwich them with cream cheese frosting for a more indulgent treat. To keep your cookies fresh, store them in an airtight container at room temperature for about a week, or freeze them for up to three months.
