  • 2 medium medium potatoes, cubed Use waxy varieties like red or Yukon gold for the best texture.
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste

For the Toppings

  • 1 cup cooked taco meat (beef, chicken, or beans) You can add black beans or corn for extra flavor.
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese Feel free to substitute different types of cheese.
  • 1/4 cup sour cream
  • 1/4 cup guacamole Add avocado for extra creaminess.
  • Crushed tortilla chips or Fritos for topping Make sure they are gluten-free if needed.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a bowl, toss the cubed potatoes with olive oil, paprika, garlic powder, onion powder, salt, and pepper.

Cooking

  • Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden and crispy.

Assembly

  • In bowls, layer the roasted potatoes, taco meat, lettuce, tomatoes, and cheese.
  • Top with sour cream, guacamole, and crushed tortilla chips or Fritos.

Notes
