Soup Base

  • 4 cups dashi broth Homemade or store-bought
  • 1 medium onion, thinly sliced
  • 2 green onions, chopped
  • 1 cup mushrooms, sliced

Seasonings

  • Soy sauce to taste Start with a little and add more as needed
  • Salt to taste
  • Pepper to taste
  • 1 medium carrot, sliced

Instructions
 

Preparation

  • In a pot, heat the dashi broth over medium heat.
  • Add the sliced onion and carrots to the broth, and cook until tender, about 5-7 minutes.
  • Add the mushrooms and green onions, and let cook for an additional 2-3 minutes.
  • Season the soup with soy sauce, salt, and pepper to taste.
  • Serve hot and enjoy your healthy Japanese clear soup!

Notes

Serve hot in bowls. Garnish with extra chopped green onions or sesame seeds. Pairs well with rice or as part of a larger Japanese meal.
