  • 3 medium sweet potatoes
  • 2 apples peeled, sliced, and cored
  • 1/3 cup honey
  • 1/4 cup butter melted
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla

  • Chopped toasted pecans for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place un-pierced sweet potatoes on a baking sheet. Bake for 40-45 minutes until soft when squeezed lightly. Let them cool afterward.
  • While the potatoes cool, peel, slice, and core the apples. Set them aside. Drizzle with a little lemon juice to prevent browning if needed.
  • Remove the skins from the sweet potatoes and cut them crosswise into 1/2-inch thick slices.

Assembly

  • In an 8x8 or 9x9 baking dish, alternate layers of sweet potato slices and apple slices.
  • In a small saucepan, melt together honey, butter, cinnamon, and vanilla. Once melted, remove from heat.
  • Pour the honey mixture over the layers in the baking dish. If using, sprinkle with chopped pecans.

Baking

  • Bake at 350°F (175°C) for 15-20 minutes until heated throughout.

Notes

Serve this casserole warm as a side dish. It pairs beautifully with roasted meats like chicken, turkey, or ham. For storage, let the casserole cool completely and then cover. It can be kept in the refrigerator for up to 3 days. For longer storage, consider freezing it, though the texture may change slightly after thawing. Tips: Cut the apples and sweet potatoes into uniform slices for even cooking. You can use different varieties of apples for varied flavors.
