  • 1 lb chicken breast, sliced into strips
  • 2 cups egg noodles Cook according to package instructions.
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli) Substitutions can include snap peas, zucchini, or snow peas.
  • 1/2 cup Hoisin sauce For extra flavor, marinate the chicken beforehand.
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced

Instructions
 

Preparation

  • Cook the egg noodles according to package instructions. Drain and set aside.
  • In a large pan, heat the sesame oil over medium heat. Add garlic and ginger, and sauté until fragrant.

Cooking

  • Add the chicken strips and cook until browned and cooked through.
  • Stir in the mixed vegetables and cook until they are tender.
  • Pour in the Hoisin sauce and soy sauce; stir to coat the chicken and vegetables evenly.
  • Add the cooked noodles to the pan and toss everything together.
  • Season with salt and pepper to taste. Serve hot, garnished with green onions.

Notes

This dish pairs nicely with a side of steamed rice or a simple salad. For a vegetarian option, substitute chicken with tofu and consider using whole wheat noodles for a healthier choice.
