Ingredients
  

Vegetables and Tofu

  • 2 cups mixed vegetables (like bell peppers, broccoli, and carrots) Use a variety of seasonal vegetables for best flavor.
  • 1 cup firm tofu, cubed For more protein, you can substitute chicken or shrimp.

Sauce and Oils

  • 2 tablespoons soy sauce For a gluten-free option, use gluten-free soy sauce or tamari.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced

For Serving

  • to taste cooked rice or quinoa Serve stir-fry over cooked rice or quinoa.

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add the minced garlic and ginger. Sauté for about 1 minute until fragrant.

Cooking

  • Add the cubed tofu to the skillet. Cook until golden brown, about 5-7 minutes.
  • Stir in the mixed vegetables. Cook for another 5-6 minutes, or until the vegetables are tender-crisp.
  • Pour in the soy sauce and mix well. Cook for an additional 2 minutes.

Serving

  • Serve the stir-fry over cooked rice or quinoa.
  • Add fresh herbs like cilantro or green onions for extra flavor. You can also serve it with a wedge of lime for a zesty finish.

Notes

If you have leftovers, store them in an airtight container in the refrigerator. It will stay fresh for up to three days. Reheat before serving. For extra crunch, add nuts or seeds.
