  • 2 cups cooked chicken, shredded Use leftover or rotisserie chicken for convenience.
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 1 cup cooked brown rice or quinoa Quinoa can be used as a substitute.
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional) Can skip or use a lower-fat version for a healthier casserole.
  • Cilantro for garnish (optional)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked chicken, black beans, corn, bell peppers, tomatoes, rice or quinoa, chili powder, cumin, salt, and pepper. Mix well.
  • Transfer the mixture to a greased baking dish and spread it evenly.
  • If using, sprinkle shredded cheese on top.

Cooking

  • Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is melted.
  • Remove from the oven and let cool slightly. Garnish with cilantro if desired before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. You can also freeze the casserole for longer storage.
