  • 4 medium zucchinis, sliced into 1/4-inch thick rounds

  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped for garnish

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and slice the zucchinis into 1/4-inch thick rounds.
  • In a large bowl, combine the sliced zucchinis with olive oil, minced garlic, Italian seasoning, salt, and black pepper. Toss until all the zucchinis are coated evenly.
  • Spread the seasoned zucchini slices on a baking sheet in a single layer.

Baking

  • Sprinkle grated Parmesan cheese evenly over the zucchini.
  • Bake in the preheated oven for about 20-25 minutes, or until the zucchini is golden brown and crispy.

Finishing Touches

  • Once done, remove from the oven and let it cool slightly.
  • Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for about 2-3 days. Reheat in the oven to regain some crunch, as microwaving may make them soggy. For extra crunch, consider using panko breadcrumbs in place of some of the Parmesan cheese. Add more spices like red pepper flakes for a kick.
