Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder Use fresh for best results.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk (or regular milk) Add 1 tablespoon of vinegar or lemon juice to regular milk to mimic buttermilk.
  • 1 large egg
  • 2 tablespoons melted butter Keep melted for incorporation.

For Cooking

  • as needed Cooking spray or extra butter for the pan To prevent sticking.

Preparation

  • In a large bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together the buttermilk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients. Stir gently until combined. Do not over-mix; it’s okay if there are some lumps.
  • Heat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or butter.

Cooking

  • Pour about 1/4 cup of batter for each pancake onto the skillet.
  • Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.
  • Flip and cook for another 1-2 minutes until golden brown.
  • Repeat with remaining batter.

Notes

Serve these pancakes warm, topped with maple syrup, fresh fruits, or a dollop of whipped cream. For a fun twist, sprinkle chocolate chips or nuts into the batter before cooking. Store leftover pancakes in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
