  • 4 large large potatoes, peeled and diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

  • shredded cheese for garnish
  • green onions for garnish

Instructions
 

Cooking

  • In a large pot, sauté the onion and garlic until translucent.
  • Add the diced potatoes and broth, bring to a boil, then reduce to a simmer.
  • Cook until the potatoes are tender, about 15-20 minutes.
  • Use an immersion blender to puree the soup until smooth, or leave some chunks if desired.
  • Stir in the cream and season with salt and pepper.
  • Serve warm with optional cheese and green onions on top.

Notes

If you have leftovers, cool down, transfer to an airtight container, and refrigerate for up to three days. Can also be frozen for up to two months. For a thicker soup, blend longer or add more potatoes. Experiment with spices for added flavor.
