Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk Regular milk can be used as a substitute.
  • 1 large egg
  • 2 tablespoons unsalted butter, melted

For Cooking

  • as needed Cooking spray or additional butter for the pan

Instructions

Preparation

  • In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, combine the buttermilk, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined (lumps are okay).

Cooking

  • Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip and cook until golden brown, about another 1-2 minutes.
  • Serve warm with your favorite toppings.

Notes

Make sure not to overmix the batter. It’s okay if there are some lumps; overmixing can make the pancakes tough. For fluffier pancakes, let the batter rest for a few minutes before cooking.
