  • 1 lb Italian sausage (hot or sweet) Use sweet or hot based on preference.
  • 4 medium potatoes, diced Yukon Gold or Russet potatoes work well.
  • 1 medium onion, chopped
  • 2 stalks celery, diced
  • 2 medium carrots, diced
  • 4 cups chicken broth
  • 1 cup heavy cream Reduced-fat cream can be used for a lighter option.
  • Salt and pepper to taste
  • Fresh parsley for garnish Adds color and flavor.

Preparation

  • In a large pot, cook the Italian sausage over medium heat until browned. Drain excess fat.
  • Add the onion, carrots, and celery, and sauté until softened.
  • Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until potatoes are tender.
  • Stir in the heavy cream, and season with salt and pepper to taste.
  • Cook for an additional 5 minutes, then serve hot, garnished with fresh parsley.

Notes

To store leftovers, let the soup cool completely. Pour it into an airtight container and refrigerate for up to 3-4 days. You can freeze the soup for up to 3 months, leaving space at the top of the container as the soup will expand when frozen. Add garlic or spices like thyme and rosemary for extra flavor. Mash some potatoes for a thicker consistency, and customize with other vegetables like spinach or corn.
