  • 1 lb ground beef Lean ground beef is preferable.
  • 1 can (15 oz) black beans, drained Ensure beans are well-drained.
  • 1 can (15 oz) corn, drained Ensure corn is well-drained.
  • 1 can (10 oz) diced tomatoes with green chilies For a spicier kick, use hot salsa instead.
  • 2 cups cooked rice Any variety of cooked rice can be used.
  • 1 cup shredded cheese (cheddar or Mexican blend) Add more cheese for an extra cheesy topping.
  • 1 packet taco seasoning Adjust to taste.
  • to taste Salt and pepper Season to your preference.
  • 1 cup sour cream Can substitute with Greek yogurt.
  • to garnish Chopped green onions For garnish.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Stir in the black beans, corn, diced tomatoes, cooked rice, taco seasoning, salt, and pepper; mix well.

Assembly

  • In a greased casserole dish, layer the beef mixture, then spread sour cream on top.
  • Sprinkle shredded cheese on top of the sour cream.

Baking

  • Bake in the preheated oven for 25-30 minutes until bubbly and cheese is melted.
  • Garnish with chopped green onions before serving.

Notes

This casserole can be made ahead of time and stored in the refrigerator. Feel free to customize ingredients and use leftover rice or different types of meat.
