Ingredients
  

For the biscuits

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed Ensure the butter is cold for flaky biscuits.
  • 1 cup heavy cream, plus extra for brushing Chill the bowl and beaters for best whipped cream.
  • 1 teaspoon vanilla extract

For the strawberry filling

  • 4 cups fresh strawberries, hulled and sliced Use fresh strawberries for optimal flavor.
  • 1/4 cup powdered sugar Mix with strawberries to create a syrup.

For serving

  • Whipped cream For serving on top.

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, combine the flour, granulated sugar, baking powder, and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the heavy cream and vanilla until just combined.
  • Turn the dough onto a floured surface and knead gently.
  • Roll out and cut into rounds using a biscuit cutter.
  • Place on a baking sheet, brush with cream, and bake for 15-18 minutes until golden.

Strawberry preparation

  • Meanwhile, mix the sliced strawberries with powdered sugar in a bowl and let sit to create a syrup.

Assembly

  • Once the biscuits are cool, slice them in half and layer with strawberries and whipped cream.
  • Top with the other half and serve with additional whipped cream.

Notes

Best enjoyed fresh, but can be made ahead of time. Store biscuits, strawberries, and whipped cream separately.
