  • 4 large sweet potatoes Peeled and sliced
  • 1/2 cup butter or margarine Melted
  • 1 cup brown sugar Adjust to taste
  • 1 teaspoon cinnamon Can substitute with nutmeg or allspice
  • 1 cup marshmallows Can be substituted with pecans for a different texture

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel and slice the sweet potatoes into 1-inch rounds.
  • In a pot of boiling water, cook the sweet potatoes for about 10 minutes until slightly tender. Drain and set aside.
  • In a saucepan, melt the butter (or margarine) and mix in the brown sugar and cinnamon until combined.

Baking

  • Layer the sweet potatoes in a baking dish and pour the butter mixture over them.
  • Bake in the preheated oven for 25-30 minutes.
  • Remove from the oven and top with marshmallows.
  • Return to the oven and bake until the marshmallows are golden brown, about 5-10 minutes.
  • Serve warm.

Notes

Make sure to slice the sweet potatoes evenly for uniform cooking. Adjust the amount of brown sugar to suit your taste. Add chopped pecans or walnuts for crunch.
