  • 1 tablespoon olive oil For sautéing
  • 1 tablespoon lemon juice Adjust to taste

Preparation

  • Heat the olive oil in a pan over medium heat.
  • Add the mixed vegetables and sauté for about 5 minutes or until they are tender.
  • Stir in the black beans and cook for another 2-3 minutes.
  • In a large bowl, mix the cooked quinoa with the sautéed vegetables and black beans.
  • Drizzle with lemon juice and season with salt and pepper to taste.
  • Toss everything together until well combined, and serve warm.

Notes

This dish can be served warm or cold. It works well as a main dish or a side. Pair it with a light salad or some grilled chicken for a complete meal. Store any leftovers in an airtight container in the fridge for about 3-4 days. Freeze portions for later after cooling.
