  • 1 lb Andouille sausage, sliced
  • 3 medium Potatoes, diced
  • 2 cups Mixed vegetables (bell peppers, onions, celery)
  • 2 tbsp Cajun spices
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese, shredded
  • 4 cups Chicken or vegetable broth
  • to taste Salt
  • to taste Pepper

Preparation

  • In a large pot, cook sliced andouille sausage until browned.
  • Add diced potatoes and mixed vegetables, and cook until softened.
  • Stir in Cajun spices, and cook for another minute.
  • Pour in broth, and bring to a boil.
  • Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  • Stir in heavy cream and shredded cheddar cheese until melted and smooth.
  • Season with salt and pepper to taste.
  • Serve hot.

Notes

Cajun Potato Soup is best served hot with extra cheddar cheese, green onions, or parsley for added freshness. It can be paired with warm bread or a side salad. For a spicier kick, add more Cajun spices or hot sauce. Use a mix of potatoes for added texture. For a vegetarian version, skip the sausage and use vegetable broth.
