  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning Adjust according to your spice preference
  • 8 ounces linguine pasta Can substitute with other pasta types
  • 1 tablespoon olive oil For cooking the chicken
  • 1 cup heavy cream For a lighter version, use half-and-half
  • 1 cup chicken broth
  • 1 cup bell peppers, sliced
  • 1 cup onion, sliced
  • 1 teaspoon garlic, minced
  • to taste None Salt and pepper
  • as needed None Fresh parsley for garnish Optional, for garnish

Instructions
 

Preparation

  • Cook the linguine pasta according to package instructions. Drain and set aside.
  • Season the chicken breasts with Cajun seasoning.

Cooking

  • In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for 6-7 minutes on each side until cooked through. Remove from the skillet and let it rest before slicing.
  • In the same skillet, add bell peppers, onion, and garlic. Sauté until the vegetables are tender.
  • Pour in the heavy cream and chicken broth, bringing the mixture to a simmer.
  • Add the cooked linguine and sliced chicken to the skillet, stirring to combine.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For longer storage, refrigerate leftovers for up to 3 days or freeze for up to 2 months. When ready to eat, thaw in the fridge overnight and reheat on the stove or in the microwave.
