  • 1 head cabbage, chopped Use fresh, crisp cabbage for the best flavor.
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 6 cups vegetable broth Use plant-based broth for vegetarian or vegan versions.
  • 1 can diced tomatoes
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • to taste salt and pepper Adjust seasoning to your taste.

Preparation

  • In a large pot, heat some oil over medium heat.
  • Add onions, garlic, carrots, and celery; sauté until softened.
  • Stir in chopped cabbage and cook until it wilts.
  • Pour in vegetable broth and diced tomatoes.
  • Add oregano, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30-45 minutes until veggies are tender.
  • Adjust seasoning and serve hot.

Notes

Serve warm in individual bowls. Pairs well with crusty bread or a sprinkle of fresh herbs. You can add a dollop of sour cream for extra creaminess.
