  • 2 pieces ripe bananas Use very ripe bananas for maximum sweetness.
  • 1 cup rolled oats Use gluten-free rolled oats for a gluten-free option.
  • 1/2 cup peanut butter Substitute with almond butter if allergic to peanuts.
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon Experiment with other spices like nutmeg.
  • 1 pinch salt
  • to taste chocolate chips or nuts Optional add-ins.

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  • In a large bowl, mash the ripe bananas until smooth.
  • Stir in the peanut butter, honey (or maple syrup), and vanilla extract.
  • Add the rolled oats, baking powder, cinnamon, and salt. Mix until well combined.
  • If desired, fold in chocolate chips or nuts.
  • Pour the mixture into the prepared baking dish and spread evenly.

Baking

  • Bake for 20-25 minutes, or until the edges are golden brown.
  • Allow to cool before cutting into bars.

Notes

Store the bars in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week or freeze for up to 3 months. Cut into bars and wrap each one individually before freezing.
