  • 2 lbs chicken, cut into pieces Use fresh, quality chicken for the best results.
  • 2 tablespoons curry powder Marinate chicken in curry powder for richer flavor.
  • 1 teaspoon allspice
  • 1 cup chicken stock
  • 1 can coconut milk
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1-2 hot peppers, chopped Adjust based on spice preference.

  • Heat oil in a large pot over medium heat.
  • Add chopped onion, garlic, and hot peppers; sauté until softened.
  • Stir in curry powder and allspice, cooking for 1 minute until fragrant.
  • Add the chicken pieces and cook until browned on all sides.
  • Pour in chicken stock and coconut milk; bring to a simmer.
  • Reduce heat, cover, and let it cook for about 30 minutes, until chicken is cooked through.
  • Season with salt and pepper to taste.
  • Serve hot with rice or flatbreads.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. For longer storage, freeze for up to two months. To reheat, warm on the stove or microwave until heated through.
